I finally found a way to get the crispiest potato wedges for the air fryer

The first dish I cooked in my air fryer was potato wedges, and ever since then I’ve been searching for the ultimate air fryer potato wedges recipe – one that promises flavor, a crispy outer shell and a soft, chewy center.

That’s why Instagram and TikTok foodie Sheyna Patel’s Potato Wedges Air Fryer Recipe (opens in a new tab) piqued my interest when it appeared on my FYP. And with over 10.8 million views and 1.1 million likes (and counting), I don’t seem to be alone.

The main difference between Sheyna’s recipe and other best air fryer wedge recipes I’ve tried in the past is the use of an ice bath. Before seasoning and cooking the wedges, Sheyna recommends soaking them in ice water for 25 to 30 minutes.

I was originally quite cynical about this seemingly unnecessarily long stage; For me, potato wedges are the perfect “quick” snack or side dish to make. However, after having tested this recipe several times with different spices, I am really won over.

Ingredients for Air Fryer Potato Wedges

The ingredients listed below yield approximately 16 potato wedges. Of course, if you are using smaller or larger potatoes, the number will vary and the amount of seasoning may need to be adjusted.

The condiments listed below can be replaced with other options depending on taste. I’ve made these wedges with Cajun and Chinese Five Spice, both alternatives work equally well.

It should be noted that I tried this recipe with cold water and ice water and both got similar results, so don’t worry if you don’t have ice cubes on hand.

  • 2 medium white potatoes
  • 3 tablespoons vegetable oil
  • 1/2 tablespoon onion powder
  • 1/2 tbsp garlic powder
  • 1 teaspoon smoked paprika powder
  • 1 teaspoon of salt
  • 1 teaspoon black pepper
  • 1 teaspoon cornstarch
  • Ice

Airfryer Potato Wedge Method

I used the Tower T17099 Vortx Eco Double Basket Air Fryer (opens in a new tab) set to 175°C (350°F) for 20 minutes. The wedges were rotated after 10 minutes to ensure they were gardening evenly.

Step 1: Cut each potato in half, then in half again, then in half again to make 16 wedges.

2nd step: Place these wedges in a large bowl of ice water and let them soak for 25-30 minutes. The cold water will help remove the starch from the potatoes, which will prevent them from puffing up and sticking together and will help give a crispy coating.

Step 3: Remove the wedges from the ice water and pat them dry with a clean kitchen towel or kitchen towel.

Step 4: Place the wedges in a dry bowl and add the spices, cornstarch and vegetable oil. Cornstarch helps remove excess moisture during the cooking process for an even crispier coating.

Step 5: Using your hand or a spoon, make sure each wedge is coated in the oil and seasoning as evenly as possible.

Step 6: Set the air fryer to 350°F (175°C), place the slices in rows a few inches apart in the air fryer basket and set the timer for 10 minutes. Ideally, the wedges should be placed on a cooking rack to allow air to circulate around them, although this is not necessary.

Step 7: After 10 minutes, open the air fryer and rotate the wedges. Set the timer for another 10 minutes. Opening the air fryer reduces the temperature. So if after 20 minutes your wedges aren’t as crispy as you’d like, leave them for a few more minutes.

Step 8: Once cooked, remove the wedges and serve with your favorite dip, as an evening snack or as a side to your main meal.

I’ve tried several recipes for cooking fries, fries, and wedges in my air fryer, and while the results are always delicious, they’re rarely as crispy as I’d like. So I was pleasantly surprised by the crispiness offered by the potato wedges prepared in this way. The inside of the corners remained soft and plush.

Although soaking the potatoes in an ice bath adds a lot of time to what should be a quick snack, I think it’s worth it for that extra crunch.
